RV Recipe for New Year’s Eve: Spinach Artichoke Dip

Savory Spinach Artichoke Dip

Ingredients

  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp minced garlic
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste

  • Tortilla or pita chips for serving

Instructions

  • Turn your oven on to 375°F.
  • Thoroughly squeeze out any excess water from the thawed spinach and chop the artichoke hearts into bite-sized pieces.
  • In a large mixing bowl, combine all ingredients and mix well until evenly combined.
  • Transfer the mixture to a 9” pie dish or a similar-sized baking dish.
  • Bake for 25-30 minutes or until the dip is hot and bubbly, and the top is lightly browned.
  • Next, turn off the oven and turn on the broiler. Let the dip stay under the broiler for 1-2 additional minutes to get a deep golden-brown, keeping a close eye so that it doesn’t burn.
  • Remove from oven and let cool for just a few minutes before serving. This dip is best enjoyed warm! Serve with tortilla or pita chips. Celery, carrot sticks, or cucumber slices are also great with this dip, or slices of toasted baguette.

If you need a make-ahead tip, pre-mix all ingredients besides the spinach and artichoke and store in a food storage container for up to 24 hours in the fridge. You can also freeze the mixture, but make sure to let it fully thaw before mixing in artichoke and spinach – and make sure to also squeeze out all excess water from the spinach so it doesn’t make the thawed mixture watery.
